Cashew Frosting

Yield: 1 Pint
Ingredients:
1 1/2 cups of raw cashews (soaked 4 to 6 hours)
10 Medjool dates, soaked
1 vanilla bean, cut into small pieces
Instructions:
1. Rinse the cashews and whip together with the soaked dates and vanilla until completely smooth and creamy.
2. Spread this frosting on top of a dessert (cake, cupcakes, etc.), use as a sweet center for a pastry, or use as a sweet dip (great with tart apple slices!) .
