Sun Dried Tomato Pate

small-sundried-pateYield: approximately 1 1/2 cups

1/4 cup pine nuts
1 1/2 cup sun dried tomatoes, soaked until soft
1/4 cup tightly packed fresh basil leaves
1/2 cup fresh curly parsley
1/2 Tbsp capers
1 Tbsp freshly squeezed organic lemon juice
4 cloves organic garlic
1/2 tsp freshly ground black pepper
2 Tbsp extra virgin olive oil

Place all ingredients except olive oil in food processor.
Pulse a few times.
Then slowly add olive oil while pulsing.
Do not over process, want coarse mixture, not paste.
