Vanilla Brownie

vanilla-brownieMakes about 12 brownies.

 

1 1/4 cup raw filberts

3/4 cup raw almonds

3 three-inch true cinnamon sticks

15 medjool dates, pitted and destemmed.

2/3 cup raw almond butter

1 vanilla bean, cut into very small pieces

4 Tbsp raw shredded organic coconut

 

Soak raw almonds in filtered water overnight.  Drain and rinse well with filtered water.

Place filberts and almonds in food processor and process until finely ground.

Grind cinnamon sticks in an herb grinder and add to food processor.

Add dates, almond butter and vanilla bean pieces and process until thoroughly mixed.

Press tightly and evenly into a 8 inch by 8 inch pan.

Sprinkle with shredded coconut.

Cut into squares when ready to serve.

Refrigerate covered for up to a week. 

Best when refrigerated at least overnight before eating.
